How to Cook

Wash in running water the contents of this package and then allow to soak in “light” water ( with a low level of calcium ) preferably all night.The best option is to cook Sorana beans in the typical glass flask, stripped of its straw cover or in a terracotta pot or any other saucepan with a lid. Cover the beans with about 2 inches of “ light “ water, add a pinch of salt, 2 to 3 garlic cloves (with the skin), 2 to 3 leaves of sage, a few grains of black pepper and a couple of tablespoons of good extra virgin olive oil. Cook for a couple of hours on a very low gas, then serve with olive oil and a sprinkle of pepper or else use as an ingredient for other recepies.

 

Normally consider 50 g of dry beans for a portion.
