Sorana beans are cultivated on small pieces of land which have been obtained throughout the centuries by forming the hillocks into terraced land and by clearing the stones from the banks of the river Pescia. We are talking of an area of about 660 hectars mostly covered by woods and olive trees north of the town of Pescia (PT), set in the so called Valleriana area. This land goes from 240 to 590 meters above sea level, on a north – south axis therefore exposure to direct sunshine is limited. During summer nights the humidity rate rises, covering the bean crops with beneficial dew. The irrigation waters are light and clear, the soil is rich with organic life and potassium.
